Coconut Eggs

Coconut eggs for Easter. Makes 2 large eggs.

Ingredients

3 1/4 c. powdered sugar
3 1/4c. coconut
6 T. butter
1/3 c. corn syrup
2 t. vanilla

Method

For inside of egg - Mix ingredients together, shape into 2 eggs (I use large plastic mold but you can do it by hand), place on wax paper, refrigerate 1-2 hours, remove from refrigerator and coat with chocolate.

For chocolate coating - Melt morsels and Crisco in double boiler. Do not let water get into chocolate. Add more Crisco if the chocolate gets hard.

Gently coat each egg with chocolate, place back on wax paper and refrigerate. After chocolate coating is hardened place each egg in container or wrap them. Keep cool. Slice, serve, and enjoy! :)
