1/2 cup Extra Virgin Olive Oil
1 cup apple cider vinegar
1/2 cup sugar
3 cans of white corn
2 cans of black eyed peas
2 cans of black beans
2 large jars of pimientos
1 1/2 small jars of chopped jalapenos
1 red onion finely chopped
1 1/2 cups of finely chopped celery
Stir together oil, vinegar, and sugar. Heat in a saucepan over medium heat, stirring constantly, until sugar melts. Set aside dressing.
Drain all remaining ingredients and toss together into a large bowl.
Pour dressing over vegetables and toss together.
Serve with tortilla chips, pita wedges, or as a topping over any main dish.
