Ingredients:
â—¦½ cup red bell pepper, diced
â—¦½ cup orange bell pepper, diced
â—¦½ cup green bell peppers, diced
â—¦½ cup green onion, thinly sliced
â—¦½ cup fresh cilantro, chopped
â—¦1 cup corn, fresh
â—¦1 tablespoon smoked paprika
â—¦1 tablespoon ground cumin
â—¦½ cup farmer’s cheese, crumbled
â—¦Non-stick spray oil
Procedure:
Using the Chef’s Knife cut peppers, onion and cilantro according to directions. Preheat the 12-inch Gourmet Skillet at medium heat for 3 minutes; lightly coat skillet with non-stick spray oil. Add corn and cook for 5 minutes while stirring. Add smoked paprika and cumin; mix well and let cook for 2 minutes or until you are able to smell the spices toasting. Add remaining ingredients and cook for 3 minutes while stirring. Serve warm with tortilla chips or as a side dish.
