1/2 Cup Adabi Ayam Kurmah Powder (See Alternate method)
1/2 Yellow Chicken Cut into Pieces.
1-small yellow onion diced.
3-4 garlic cloves diced
1/2 cup of White Bean spouts
3-4 Lady finger cut in half.
1-2 white potatoes diced.
1 table spoon jintan manis (caraway seeds)*
1 table spoon jeerkan seed (cumin seed)*
1-2 stalks lemon grass joulined.*
2-3 Ginger root pieces slightly bruised.
2-3 cup coconut milk
1/2 teaspoon salt & black pepper.*
2-3 ripe fresh lime.
* Optional items if you don't have them.
Dice Onions first and layer bottom of a crock-pot dish then place chicken pieces on top in a circle. Prepare paste using packaged Adabi powder by adding 2-3 tablespoon of water. Not too much water you want to form a paste. Pour paste directly onto the chicken using back of spoon to cover the chicken with the paste. Sprinkle diced-garlic over the top of the paste. Layer in the potatoes and drop the bean spouts, lady finger onto the top of chicken. Sprinkle in cumin and caraway seeds. Don't stir but push the lemongrass down into sides of the pot. The Adabi Kurmah Powder already has caraway and cumin in it, but I like to add some fresh seed for wow effect.Add 1/2 cup more water to bring level up over the chicken. Don't put any oil or excess water cos the chicken will make it's own juices as it cooks. If you like a dry Kurmah you can boil it off later. Heat crock-pot on low for 4-6 hrs. Then save off some of the fat juices from the top of pot and then add the coconut milk, 1/4-cup of wet corn starch. Place crock pot o high for 1-hr or until gravy reaches desired consistency. Serve over rice or with fresh lime. My family likes Chessy Garlic bread with it too.
ALTERNATE method for Kurma Powder:
If you can't get the packaged Adabi Kurma powder at store. You can ground your own with a spindle. (www.adabi.com.my)
Masala powder: Coriander, Fennel, Turmeric, Chili, cumin , caraway seed.
I prefer not to make the paste for consistency.
