Difficulty: Medium - experience needed
2 lbs chicken breast (or boneless/skinless thighs)
2 cups Greek yogurt
3 garlic cloves minced
1 tsp ground cumin
1/2 tsp Dried oregano
1/2 English cucumber minced (or regular, seeded)
1 Tbsp olive oil
1/2 Tbsp red-wine vinegar
4 whole-wheat pitas
Juice of 1 lemon
Salt and fresh ground pepper
-Combine chicken with half the yogurt and 1 clove, cumin, oregano and lemon juice
And pinch of salt and pepper, mix and let marinade in fridge for at least 2 hours. Longer for more flavor
Make the sauce
-Heat grilll pan on high
-Mix remaining yogurt, garlic with cucumber, olive oil and vinegar. Salt to taste and set aside.
-Grill chicken until slightly charred on both sides and cooked through @8 min.
-Let rest for 5 min, and lightly toast pita on grill
-slice chicken into strips (or pull) and stuff into pitas. Add yogurt sauce and whatever toppings.
I found that red onions (chopped or thinly sliced), a little romaine, tomotoes, and hummus or hot sauce, kick a little life into it. Also you can lightly coat the pita with olive oil and hit them with a little Mediterranean spices, to add a little flavor as well. This is a good recipe to play with.
