Ingredients

1 can beans (black, kidney, garbanzo, etc.)
Onions
Red Peppers
Canned Chilis (Hatch, etc. - not hot peppers)
Tomato
Eggs
Cheddar Cheese

Method

Saute onions and peppers
Layer in casserole dish:
- beans, onions and peppers, tomatoes, chilis.
- eggs

Bake for 20 min at 350F. Place cheese on top and finish under broiler
