Difficulty: Easy - for beginners
2 Salmon steaks (6-8oz each)
1/4 cup extra-virgin olive oil
4 cherry tomatoes cut into 4 pieces each
12 stalks fresh asparagus
1/2 tsp salt
1/2 tsp freshly ground black pepper
3-4 pinches oregano
4 lemon wedges (about 1 lemon)
½ cup high quality balsamic vinegar (preferably Modena)
1/4 cup lemon juice (about 1 lemon)
1. Brush top and bottom of salmon with olive oil and season with salt, pepper, and oregano.
2. Place the pieces of seasoned salmon on a pre-heated grill and cook about 4 minutes on each side.
3. Place the tomatoes on the grill and sprinkle olive oil and oregano. Grill until they are soft.
4. Break the asparagus at the breaking point and place on the grill. Sprinkle olive oil, oregano and Balsamic vinegar. Sizzle real good and until they are charred. The more charred the better they will taste.
