Apple Crisp

5 c. sliced, peeled apples
2-4 tb. sugar*
1tsp. lemon juice (optional, but I usually include it)
1/2 c. oats (I usually use regular, because that's what I have, but quick should work, too. Just NOT instant!)
1/2 c. packed brown sugar
1/4 c. flour
1/4 tsp. cinnamon
1/4 c. butter
1/4 c. chopped nuts or coconut (optional)


Place fruit in 8x1-1/2" round baking dish (or 8x8" square). Sprinkle with lemon juice and 2-4 tb. sugar.*

For topping, in mixing bowl combine oats, brown sugar, flour and cinnamon. Cut in butter 'til mixture resembles coarse crumbs. Stir in nuts and coconut, if using. Sprinkle topping over fruit filling.

Bake at 375 degrees for 30-35 minutes or till fruit is tender and topping is golden. (May reduce heat if browning too quickly) Serves 6. Enjoy!

*Note: I only add this sugar if using very tart apples. Otherwise, I leave it out.
