Ingredients

For a 9x13 pan (serves 12, or so they say; clearly they haven't visited our house!):

Mix 1 unbeaten egg, 1 cup milk, and 1/2 cup oil.

Then add these sifted ingredients:
1 cup sugar
2 cups flour
1/2 tsp. salt
4 tsp. baking powder

Topping:
1/2 c. brown sugar
2 Tbsp. flour
2 tsp. cinnamon
2 Tbsp. melted butter
Nuts if desired (I put 1/2 cup pecans)

Cook for 20 minutes in a 9x13 pan at 350-375 degrees F.

Method

For an 8x8 pan (serves 4-6):
(Grandma Joyce says to make topping first)
Topping:
1/4 c. brown sugar
1 tsp. cinnamon
1 Tbsp. flour
1 Tbsp. melted butter
1/4 c. nuts, if desired


Mix together and sprinkle on top of batter in pan.

Now: Mix together 1 unbeaten egg, 1/2 c. sugar, 1/2 c. milk, and 1/4 c. oil.

Then add these sifted ingredients:
1 c. flour
1/4 tsp. salt
2 tsp. baking powder.

Stir only until wet. Batter will be lumpy. Bake in greased, floured pan 350-375 degrees about 20 minutes. A round or square (8x8) pan is OK.
