2 lbs ground turkey (break up with hands)
1 lb ground beef (break up with hands)
1 large onion diced small
5 cloves of garlic diced small
2 cups of bread soaked with enough milk to make it soggy but not drenched like french toast.
1 cup of grated parm (use the good stuff)
1/4 cup diced basil
1/4 cup diced Italian parsley
freshly ground pepper
1/2 tsp salt (not much because the cheese is salty)
Mix until everything is combined. Don't go crazy and overmix. I like some chunks of bread. I make them a little larger than a Swedish meatball; about 1 1/2 inches. Place them on a parchment lined cookie sheet or jelly roll pan. Drizzle with olive oil and back at 375 for 25-30 minutes. When the are done, they should be nicely browned with some delicious melted cheese puddling around them. Pick them up with tongs and gently place them into their tomato sauce bath to simmer away.
