Sweet Heart of Palm Salad

Ingredients

1 can of hearts of palm
Spinach leaves, trimmed, washed and well dried
6 tbsp. vegetable oil
3 tbsp. fresh lemon juice
1/2 tsp. salt
1/2 tsp. granulated sugar
1/4 tsp. paprika
1/2 tsp. aromatic bitters
1 tbsp. finely minced celery
2 tbsp. finely minced pimento-stuffed green olives
2 tbsp. finely minced scallions (with tops)
Pimento for garnish

Method

Arrange hearts of palm, sliced lengthwise, on spinach leaves. Combine remaining ingredients except garnish and pour over the salad. Garnish with pimento
