Blueberry Cobbler

A tasty treat for breakfast or dessert.
Any kind of berry can be substituted.

Preparation time: 30 min.
Cooking time: 30 min.

1 large loaf of french bread (baguette) cut into 2 cm thick slices
6 eggs
6 tbsp milk
1/3 + 1/2 sugar (more if you prefer sweeter)
1tsp baking powder
1 tbsp vanilla extract
1 Kg berries frozen or fresh
1 tbsp corn starch
1/2 melted butter

butter for pan
powdered sugar to sprinkle over top


Prepare 2 hours in advance (or the night before)
1. Mix eggs with milk, 1/3 cup sugar, baking powder and vanilla extract
2. Pour over bread and let soak

3. Mix berries with 1/2 cup sugar and corn starch
4. Let sit until berries become juicy and soft

5. Preheat oven to 200°
6. Butter a large casserole dish
7. Cover bottom of casserole dish with a layer of berries
8. Place a layer of bread over berries
9. Cover with another layer of berries
10. Place another layer of bread over berries
11. Brush 1/2 cup butter over the top layer of bread

12. Bake for 35 min. or until golden brown
13. sprinkle with powdered sugar
