Gorgonzola Stuffed Sliders

1 1/2 lb. ground beef 75% lean
1/2 cup gorgonzola cheese
6 slices of thick cut pancetta
1/4 cup mayo
1-2 tbsp. Tabasco "Smoked"
6 dinner rolls
sliced red onion


Divide the beef in to 12 patties, about 1/8 lb. each, or 2-3" diameter 1/4" thick. Crumble about 1 tbsp of gorgonzola on 6 of the patties, then press a plain patty on top, crimping around the edges. Mix the mayo and Tabasco until smooth. Cook the pancetta on a griddle until crispy. Grill the burger patties about 3-4 minutes a side. If they start leaking they're probably done. Slice the rolls in half and toast briefly. Layer a few ribbons of onion under the burger patty, then top with a slice of pancetta and some of the mayo mixture. Be careful, the liquidy gorgonzola goodness inside will be hot!
