Mostaccioli with Spinach, Tomato, and Feta Cheese

Serves: 4-6


8 oz. mostaccioli, uncooked

3 cups chopped tomatoes

4 cups fresh spinach, stems removed, washed

1/2 cup chopped green onions

2 Tbsp. olive oil

1 pkg. (8 oz.) Feta Cheese with Basil & Tomato, crumbled


COOK pasta as directed on package; drain. Return to pan.

ADD tomatoes, spinach, onions and oil; mix lightly. Cook 2 minutes or until spinach is wilted and mixture is thoroughly heated, stirring occasionally.

ADD feta cheese; cook 1 minute. Stir.

Notes: I also added 1 boneless skinless cooked stripes of chicken.
I couldn't find Mostaccioloi pasta so I used Rigatoni.
I opted chopped tomatoes with one can of diced tomatoes with juices. (making it much easier.)
