Fried Chicken

Your basic fried chicken -- best of the best!

1 large, cut-up fryer
1/2 c. flour
4 tsp. dry mustard
2 tsp. salt
2 tsp. paprika
1 tsp. black pepper
3 TB. oil


Mix dry ingredients in paper or plastic bag and add chicken pieces, a few at a time, shaking to coat well. Place in pan (into which you've already poured the oil) just large enough to hold chicken without overlapping (I use a 9/13") and turn each piece just once in the oil. Bake in 350-degree oven to 35-45 minutes, turning chicken once during this time. Turn oven to 450-degrees and bake 10-15 minutes longer, or until chicken is golden brown. Watch so it doesn't burn!
