Mostaccioli with Snow Peas and Ricotta Salata

Ingredients

1 lb Mostaccioli pasta (uncooked)
4 Tbs olive oil
1 med onion, peeled and diced
2 cloves garlic, chopped
1 lb snow peas, rinsed and halved
1 pint grape tomatoes, rinsed and halved
salt and pepper to taste
4 basil leaves, rinsed and torn
1/3 c Ricotta Salata cheese, shredded

Method

Bring a large pot of water to boil and cook pasta according to directions.

Meanwhile, heat 2 Tbs of the oil in a large skillet and saute the onions for 5 minutes. Mix in the garlic and continue cooking for 1-2 more minutes. Then stir the snow peas into the skillet and saute for 2 minutes. Add tomatoes then toss. Sprinkle with salt and pepper to taste.

Drain the pasta.

Toss together the pasta and the onion mixture.

Stir in remaining 2 Tbs oil, Basil and top with cheese.
