6 to 7 medium, washed and peeled carrots, 1 1/4 cups apple cider vinegar, 1 1/2 cups water, 1 to 2 tbsps. sugar, 4 cloves garlic (peeled and smashed), 4 tsps sea salt, 1/2 tsp whole black peppercorns, 1 small bunch roughly chopped fresh dill
Halve carrots crosswise, and then cut lengthwise into 1/3 inch wide sticks. In a medium saucepan, combine the vinegar, water, sugar, garlic, sea salt and whloe black peppersorns; whisk to dissove sugar and salt. Bring to a boil; add carrots and dill. Coverr and simmer 1 minute; then remove from heat, cool, and chill covered for at least 24 hours to allow flavors to infuse carrots.
