Caprese Salad with Balsamic Reduction

2 Mozzarella balls

3 vine tomatoes

Fresh basil leaves


Strawberry Pomegranate Balsamic Reduction (to drizzle on top)


2 cups balsamic vinegar (available in most grocery stores)

1/4 cup White granulated sugar

1 Tablespoon Vanilla

You can also add desired fruit to blender to add flavor. I like strawberries, peaches or mango's. If you use a sweeter fruit, like a peach, be sure to reduce the amount of granulated sugar you add.


REDUCTION INSTRUCTION: (Yes, I feel clever because that rhymes).....

Place sugar and balsamic vinegar into a blender. Mix until totally smooth. Pour into a pot and bring to a rolling boil. Reduce the heat and simmer until about a maple syrup consistency.


Mix everything together. Or arrange on a plate. Drizzle reduction on top.
