Apple Yogurt Coffee Cake

Difficulty: Easy - for beginners


1/2 cup butter
1 cup Sugar substitute
1 1/4 teaspoon Baking Soda
1 teaspoon Baking Powder
1/4 heaping cup of instant milk powder
1 cup plain yoghurt
2 eggs
2 cups flour
3 apples, peeled & thinly sliced
1/4 teaspoon cinnamon
1/4 cup brown sugar substitute
1/2 cup almond flour


Cream the butter and sugar together until light and fluffy. Slowly add eggs and yoghurt and mix till creamy. Add the dry ingredients and mix until combined. Pour half the batter into a greased and floured 12x12" baking dish. Spread half the apples evenly over the batter. Mix the cinnamon, brown sugar and almond flour together and sprinkle half over the apples. Pour the remainng batter over this and sprinkle the other half of cinnamon mixture over the top of the batter. Bake at 350* for about 35 minutes or until a golden brown.
