Difficulty: Easy - for beginners
4 c berries (blueberries, blackberries, raspberries or sliced strawberries)
3/4 c plus 3T sugar, divided
3 T Minute Tapioca
1/4 t ground cinnamon
1 T lemon juice
1 1/2 c all-purpose baking mix
1/3 c milk
Preheat oven to 350 degrees. Spoon berries into lightly greased 9-in square baking dish. Mix 3/4c sugar, the tapioca and cinnamon in saucepan; stir in water and lemon juice. Bring to boil over med high heat. Pour over berries in baking dish; set aside.
Stir baking mix, remaining 3 T sugar and the milk in med bowl until mixture forms a soft dough. Drop by heaping tablespoons onto fruit mixture.
Bake 28-30 min or until biscuit topping is golden brown. Cool slightly.
Serve with whipped cream or ice cream if desired.
ALTERNATE TOPPING; Instead or baking mix & milk, sprinkle one 9-oz box Jiffy cake mix evenly over top on berries. Drizzle with 1/2 stick melted butter or margarine. Watch closely so you don't over brown,
