2 cans cream of chicken soup
1 cup chicken broth
2 cups chopped cooked chicken
2 medium tomatoes, diced
1 cup chopped celery
1 cup chopped green peppper
1/2 cup chopped green onion
1 can pineapple tidbits, drained (save juice)
1 cup cheddar cheese
1/2 cup slivered almonds
1/2 cup coconut
Chow mein noodles
Amount of rice desired


Combine soup, chicken broth and pinapple juice in a medium saucepan to make gravy. Stir to blend. Add chicken, then simmer about 8 to 10 minutes until heated through.
On individual serving plates, layer all ingredients on top of a bed of rice. First stack chow mein noodles, chicken gravy and cheese. Add tomatoes, celery, green pepper and green onion. Top this with pinapple chucnks and more chicken and gravy if desired. Stack almonds and coconut on top.

*for low fat chicken gravy, just use 1 can cream of chicken soup and thicken it with corn starch.
