Muesli Cake Slice

Delicious, easy and healthy slice recipe.
*Keep in mind, although this is a healthy slice recipe, this slice still need to be treated as an “occasional” food.

Ingredients

•½ cup of almond meal (or wholemeal flour)
•½ cup raw, unsalted almonds
•½ cup raw, unsalted walnuts
•1 cup mixed dried fruit
•2 tbsp LSA
•3 eggs
•1 tsp vanilla extract
•½ tsp cinnamon
•2 tbsp olive oil
•2 tbsp honey

Method

1. Preheat oven to 160’C.
2. Combine all ingredients thoroughly.
3. Line a shallow baking tray with baking paper, and spread the mixture evenly so that it is around 2 cm high.
4. Bake for 25-30minutes or until set.
5. Cool for 10minutes then cut into snack sized slices.
