Tart au Citron

Tart shell (see recipe for tart dough)
250ml lemon juice
zest of 2 lemons
200g sugar
175g butter
3 eggs
3 egg yolks


1. squeeze lemons for juice
2. grate lemon rinds for zest
3. heat lemon juice, zest, sugar and butter over low heat until butter is melted
4. whisk eggs and egg yolks together
5. add a small amount of lemon mix into the eggs to warm them
6. add eggs into lemon mixture
7. heat over low to medium heat being careful not to scramble until mixture thickens considerably (bubbles just begin to form)
8. fill shell
9. bake for 5 min. to set

cool and serve
