Mash 2 large peaches, then add:
1 cup sugar
3 tablespoons corn starch
1/2 cup water
Cook about 5 minutes until mixture boils and thickens. Add 1/2 teaspoon almond extact and 2 tablespoons butter.
Pour over 3 large sliced peaches, then put mixture into precooked pie shell. Refrigerate.
Can be topped with whipped cream or ice cream.
