Chicken Caesar Sport Salad

Caesar salad made into a sport salad with precooked chicken and whatever fresh veggies you want. Great for a summer entree.

Preparation time: 10 mins.
Cooking time: 2.5 mins.

Difficulty: Easy - for beginners
Serves: 3-4 people


1/2 head of iceberg and/or romaine lettuce - ripped into pieces
1 c. fresh spinach leaves (optional)
cucumber - sliced (optional)
1/2 head of broccoli - cut into small florets (optional)
1/2 c. cauliflower (optional)
1 tomato sliced or 1/2 c. cherry tomatoes cut in half (optional)
4-5 white button mushrooms - sliced (optional)
3/4-1 lb. precooked, ready to eat, chicken breast meat
sliced black olives (optional)
Croutons (optional)
Kraft Caesar Salad Dressing (to taste)
1-2 T. shredded Three Cheese (Parmesan, Roman, Asiago) or Parm.


We take 3 to 4 dinner plates and place spinach and iceberg lettuce on top of plate. Then we add whatever ingredients we like. Ours most of the time has broccoli, chicken, tomato, cucumber in it but we also add other fresh veggies to make it more of a sport salad. (Pretty much pull what we have out of the fridge and whatever is wanted is added.) Thaw whatever amount of chicken you'd like, cut into 1 in. pieces and put on salad. Top with Caesar dressing, croutons (if wanted) and shredded Parmesan or Three cheese. It's a yummy, filling cold entree for a hot summer evening.
