Difficulty: Easy - for beginners
25 cucumbers, sliced
10 onions, sliced
1/4 c salt
5 lbs sugar
3 c white vinegar
Place cucumber and onion slices in a large bowl. Cover with salted water and let stand in refrigerator for 24 hours. Drain.
Dissolve sugar in vinegar. Cool syrup and pour over cucumbers and onions.
Put in containers and freeze.
Makes about 8 pints.
If the cucumbers are small and tender there is no need to peel them before slicing.
