Difficulty: Easy - for beginners
1 c sugar
1/2 c flour
1/8 tsp salt
1 c water
1 1/2 c crushed pineapple
2 egg yolks
1 1/2 Tbs butter
1 Tbs lemon juice
Heat pineapple to boiling. Mix together sugar, flour, and salt. Add 3/4 c cold water. Stir this mixture into hot pineapple.
Cook over direct flame, stirring constantly until it has boiled a few minutes.
Remove from fire.
Separate the eggs, putting yolks in the same bowl in which the dry ingredients were mixed. Beat the yolks slightly and add the remaining 1/4 c water. Beat this into the pineapple mixture. Add the lemon juice.
Return to the fire and cook, stirring constantly, until it just boils. Add butter.
Mix well then pour into baked pie shell.
Cover with meringue.
