Difficulty: Easy - for beginners
1/4 tsp salt
2 egg yolks
4 Tbs minute tapioca
4 c milk
4 Tbs butter
2/3 c packed brown sugar
2 egg whites, stiffly beaten
Combine minute tapioca, salt, egg yolks, and milk in top of a double boiler. Stir enough to break up yolks. Place mixture over rapidly boiling water. Bring to a scalding point (allow 5-7 minutes). Cook 5 more minutes, stirring frequently. Remove from boiling water.
Melt butter in a saucepan. Add sugar and cook until sugar is completely dissolved and mixture bubbles.
Ad to tapioca mixture and mix well.
Fold small amount into egg whites. Add remaining tapioca mixture and blend.
Chill. Mixture thickens as it cools.
Serve plain or with cream.
