Nana's Rhubarb Crisp

Difficulty: Easy - for beginners


1 c sifted flour
1 c brown sugar
3/4 c oatmeal
1/2 c melted butter

4 c rhubarb

1 c sugar
2 Tbs cornstarch
1 c hot water


Mix together flour, brown sugar, oatmeal and melted butter into a crumbly mixture.

Reserve 1/2 c mixture for use as a topping.
Press the remainder of the mixture into the bottom and up sides of a 9X9 baking pan.

Pour rhubarb over crust.

Mix together sugar, cornstarch, and water. Cook until mixture thickens. Pour mixture over rhubarb.

Sprinkle the reserved topping over the rhubarb and syrup mixture.

Bake for 1 hour at 350.
