Difficulty: Easy - for beginners
2 c raisins
1 can (14 oz) sweetened condensed milk
1 Tbs grated lemon peel
1 Tbs lemon juice
1 c butter, softened
1 1/3 c firmly packed brown sugar
1 1/2 tsp brown sugar
1 1/2 tsp vanilla
2 1/2 c oats
1 c flour
1 1/2 c chopped walnuts
1/2 tsp baking soda
1/4 tsp salt
Heat oven to 375.
Grease a 13 X 9 pan.
In a medium saucepan combine raisins, milk, lemon peel, and lemon juice. Cook over medium heat, stirring constantly until mixture begins to bubble. Remove from heat. Cool slightly and set aside.
Beat butter, sugar, and vanilla until fluffy. Add remaining ingredients and blend until evenly mixed and crumbly. Reserve 2 cups of mixture.
Press remaining mixture onto bottom of prepared pan.
Spread raisin mixture to within 1/2" of edge. Sprinkle with remaining crumb mixture.
Bake 25-30 minutes.
