1/4 lb baby spinach leaves
8-10 Crimini mushrooms, sliced
1 clove garlic (optional)
1 lb Ricotta
2 oz Mozzarella
1 Tbsp Parmesan
1 tsp Rosemary leaves

Pizza dough for 1 10-14" pie
Pizza sauce
Olive oil


Preheat oven to 375
Wash & devein spinach, chop to 1/2 x 1/4", add mushrooms, cheeses, and garlic. Mix well by hand. Prepare dough per instructions. When stretching, roll rosemary leaves into dough evenly. Make an oval approximately 10 x 12" and pile, do not spread, filling off-center lengthwise and spread cold water by fingers along the entire edge to about 1/2". Pull the dough over the filling to join sides, fold over itself again and pinch together the entire length. Place on a very lightly oiled oven pan. Let rise 60 minutes.

Bake at 375 for 20-35 minutes just until evenly golden all over. Serve with warm pizza sauce or marinara and parmesan.
