Nana's Old South Carrot Cake

Difficulty: Easy - for beginners


2 c all purpose flour
2 c sugar
1 tsp baking powder
1/4 tsp soda
1/4 tsp salt
1 tsp cinnamon
4 eggs
1 c vegetable oil
2 c grated carrots

Deluxe Cream Cheese Frosting
1/2 c butter, softened
4 pkg (8 oz each) cream cheese
16 oz powdered sugar
2 tsp vanilla extract
1 c chopped pecans
1 c flaked coconut


Combine dry cake ingredients. Stir gently and set aside.

Combine eggs and oil beating well. Fold in the dry ingredients and the carrots.

Spoon the batter into 3 greased and floured 9" cake pans.

Bake at 375 for 25 minutes or until cake tests done.

Cake layers will be thin. Let cool 10 minutes then remove from pans and let cool completely.

Beat together all the cream cheese icing ingredients. Spread the frosting between layers, on top, and around sides of cake.
