Difficulty: Easy - for beginners
2 c sugar
1 c light corn syrup
1 c water
2 c raw peanuts, blanched (boiled for 3 minutes then cold water bathed)
1/4 tsp salt
1 tsp butter
1/4 tsp baking soda
Combine sugar, corn syrup and water in a heavy skillet. Cook slowly, stirring until sugar dissolves. Cook to a soft-ball stage (238 degrees).
Add nuts and salt to mixture. Heat to hard crack stage (290), stirring constantly.
Remove from heat. Add butter and soda then stir to blend.
Mixture will bubble.
Pour onto greased platters.
Cool partially by lifting around edges with spatula. Keep moving spatula under mixture so it won't stick. When the mixture is firm but still warm, turn it over. When the mixture is cooled, break it into pieces.
