Nana's Zucchini Bread from Judy Sims

Difficulty: Easy - for beginners


3 eggs
2 c sugar
1 c vegetable oil
2 c grated unpeeled zucchini
2 c sifted all purpose flour
2 tsp soda
1 tsp salt
2 tsp ground cinnamon
1/4 tsp baking powder
2 tsp vanilla extract
1 c chopped walnuts or pecans


Beat eggs until foamy in a large mixing bowl. Add sugar and oil. Mix well. Stir in zucchini.

Combine all dry ingredients. Stir into zucchini mixture only until moistened.

Add vanilla and nuts.

Stir gently.

Pour batter into two greased and floured loaf pans.

Bake at 325 for 1 hour. Cool 10 minutes then remove from pan to finish cooling.
