Nana's Fried Chicken

Ingredients

3 lb fryer chicken cut up into serving size pieces
2 eggs
1/2 c milk
1 c sifted flour
1 tsp baking powder
1 tsp salt
1 Tbs melted shortning

Method

Frying temperature 375 for 5 - 7 minutes

Wash chicken. Cook until partially tender, simmering in boiling water for 30 minutes. Drain and cool. Sprinkle with salt and pepper.

Beat the eggs and mix in milk.

Mix together flour, baking powder, and salt. Beat the dry ingredients into the milk mixture and add in the oil. If the batter becomes too thick upon standing then mix in additional milk 1 tbs at a time.

Dip chicken pieces in batter one piece at a time, allowing to drip slightly. Deep fry in hot oil until golden brown. Drain on absorbent paper and serve hot.
