Glazed Pork Tenderloin with Pineapple

4 slices of fresh pineapple
3tbs dark hoison sauce
2tsp grated & peeled fresh ginger
1 garlic clove, minced
1tsp Dijon mustard
1 & 1/2 pounds pork tenderloin, trimmed
sea salt & freshly ground pepper
quick ginger sauce (recipe below), for serving


1. Heat a frypan. Place pineapple slices on a foil-lined baking sheet.

2. In a small bown, combine the hoisin sauce, ginger, garlic & mustard.

3. Place the pork on a broiler pan fitted with a rack. Brush with hoisin mixture; season with salt & pepper.

4. Place pork in the broiler, about 4inches from the heat; place pineapple in the oven. Broil the pork until it registers 155'F on an instant-reat thermometer, 15 to 20mins. Remove from broiler (let it rest for about 10mins before slicing;) Turn the pineapple slices; cook until browned in spots, about 10mins more.

5. Halve pineapple slices; arrange on a platter with sliced pork. Drizzle pork with pan juices; season with salt & pepper. Serve with ginger sauce.

1tsp soy sauce
freshly ground pepper

1. In a small bowl, stir together the hoisin sauce, pineapple juice, ginger & soy sauce; season with pepper.

2. Serve with the pork & pineapple!
