Most used for pork, but you could also use it on lamb. Rub can be made ahead and stored for a few weeks.

Ingredients

2 1/2 tbsp ancho chili powder
2 tbsp cumin
1 tbsp ground coriander
1 tbsp kosher salt
1/2 tbsp sweet paprika
12 tbsp brown sugar
1/2 tsp fresh ground pepper
1/4 tsp cayenne

Method

In a small bowl, mix all ingredients. Store in an air tight container, if not using right away.
