Chicken with Sundried Tomato and Peppers

1 lb thin chicken breasts (pounded or halved)
1/2-3/4 cup sliced sun dried tomato
1 large red, yellow or orange pepper sliced
1 medium to small onion sliced
3 cloves garlic, minced
1/2-3/4 cup white wine
3T olive oil
salt, pepper
flour for dusting
Feta cheese
3 T chopped fresh herbs (basil, oregano, chives)


Dust chicken breasts with salt, pepper and flour
Brown chicken in Olive oil and then remove from pan and set aside
Saute onion and pepper in same pan until soft, then add garlic and saute for 1 minute
Deglaze pan with wine
Add sundried tomato and stir for a minute or two
Add chicken to the pan and cover and cook for 10 minutes or until cooked through
Top chicken with herbs, cover and cook for 1 minute
Serve over wild rice and top with crumbled feta cheese
