1 lemon, zest removed & minced
2tbs chopped fresh parsley
1 garlic clove,
sea salt & freshly ground pepper
2tbs olive oil
4 bone-in pork chops
1. Combine minced lemon in a small bowl with parsley, garlic, 1/2tsp sea salt & 1/4tsp pepper. Set aside.
2. Heat olive oil in a large frypan over high heat. Season pork chops on both sides with salt & pepper. Cook until browned about 2-3mins per side.
3. Add 1/2 cup of water to the frypan; bring to a boil. Reduce heat to medium-low heat, cover & simmer gently until pork is cooked through about 8-10mins.
4. Transfer pork chops to serving plates; drizzle with pan juices & sprinkle with lemon-parsley mixture.
