Dietary guidance: v v n g d
-1 medium ripe Cantaloupe
-1 cup fresh Orange Juice
-1 cup cold water
-Juice from ½ of a lime
-1 Tblsp fresh Tarragon roughly chopped
-A pinch of Halen Mon Organic Salt
2 Tblsp Persian Lime Olive Oil
Honey Ginger Balsamic
-Cut a fresh cantaloupe in half, scoop out and discard the seeds. Cut each half in half again and scoop out the fruit.
-Place the fruit in a blender; add the orange juice, water, lime juice, tarragon and Persian Lime Olive Oil. Add a pinch of salt. Puree until smooth (If the soup is too thick add additional water in ¼ cup increments until you reach desired consistency).
-Pour the contents of the blender in a pitcher and let sit in the refrigerator for at least an hour to allow the flavors to combine.
-Serve in small soup bowls or shot glasses. Drizzle with Persian Lime olive oil and Honey Ginger balsamic and serve immediately.
