Sweet Potato Plaki

Ingredients

1 pound sweet potatoes
1/2 pound butternut squash
1/2 cup Ah love Extra Virgin Olive Oil
1 medium onion, grated
4 garlic cloves, thinly sliced
1 cup Kaldi Tomato Sauce with Orange
Pepper
2 tbl fresh dill, coarsely chopped
1/4 cup feta cheese, crumbled

Method

-Peel sweet potatoes and slice into rounds about 1/4" thick. Set aside
Peel butternut squash and remove seed. Slice to 1/4". Set aside

-In a large saute' pan, heat 2 tbl olive oil; saute onions for 3-4 minutes until translucent.

-Add garlic and saute' for 30 seconds taking care not to burn the garlic. Add Kaldi sauce and heat for 1 minute stirring constantly.

-Add sweet potatoes, squash, salt, pepper and 2 cups water, Mix to coat vegetables. Cover and simmer on low heat for 20 minutes or until vegetables are tender.

-When tender, uncover and drizzle in remaining olive oil; do not stir as vegetable may break apart.

-Cover and simmer for 5-10 minutes. Add water 1 tbl at a time if needed to keep food from sticking or burning.

-Remove from heat; serve sprinkled with feta cheese.
