Dietary guidance: v v n g d
-1 cup Freeka (a whole grain similar to brown rice or wheatberries)
-1 cup celery-small dice
-1 onion chopped and cooked until translucent
-1 cup dried cranberries
-½ cup scallions chopped including green and white part of stem
-½ cup Ah love Cranberry Balsamic
-2 Tablespoons apple juice
-½ teaspoon Brown Rice Vinegar
-Pinch of salt and pepper
-Chop and dice the onion, and celery. Cook over medium high heat until the onions are translucent.
-Add the freeka to a pot along with 3 cups of water. Bring the Freeka to a boil and then turn down the heat so the grain appears to be at a simmer. Cover with a lid.
-After 35-45 minutes when all the water has been absorbed, pour the Freeka in a bowl and add the celery,scallions, onions and cranberries. Next pour the sauce over the Freeka and serve.
Flavor variations: replace dried cranberries with currants or raisins and use Green Apple, Bergamot Lemon, Raspberry or Strawberry Balsamics.
