Serves: 5 mini loaves
1 1/4 c. sugar
1/2 c butter, softened
1 1/2 c. mashed banana (3-4)
1/2 c. buttermilk (or add 1 TBSP vinegar to 1 c. milk and let sit 5 min)
2 1/2 c. flour
1 t. baking soda
1 t. salt
1 c. fresh or frozen (thawed/drained) berries (I use Schwan's Triple Berry mix)
Heat oven to 350 and spray mini loaf pans with cooking spray.
Stir together sugar, butter, eggs, bananas and buttermilk.
Stir in flour, baking soda, and salt until moistened.
Stir in berries. Pour into loaf pans.
Bake about 50 minutes until toothpick inserted in center comes out clean.
