Salt & Pepper Tofu with Sticky Sauce

Ingredients

1/4 cup grated palm sugar
2tbs kecap manis
1 & 1/2tbs oyster sauce
1 star anise
375g firm tofu, cut into cubes
2tbs sea salt
1 & 1/2tbs white peppercorns
2tsp caster sugar
1 cup cornflour
peanut oil, for deep-frying
2tbs fried Asian shallots, to garnish
coriander leaves, to garnish

Method

1. Put palm sugar, kecap manis, oyster sauce & star anise into a pan. Cook over a low heat until sugar melts, simmer for 3mins. Remove star anise.

2. Put the salt & pepper into a mortar & pestle or food processor & combine to form a powder.

3. Transfer the salt & pepper to a bowl, add the sugar & cornflour and mix well. Toss the tofu in the salt & pepper mixture, shaking off any excess.

4. Heat oil in a wok & deep-fry the tofu in batches for 3mins or until golden. Drain on paper towel.

5. Serve tofu drizzled with syrup & garnished with fried shallots & coriander.
