Pastry for 2 crust pie, or could use purchased pie crust
1/2 cup brown sugar (packed)
1/4 cup granulated sugar
1/2 TB flour
1 TB milk
1/2 tsp vanilla
1/2 cup pecans or walnuts (I chop nuts pretty fine, and then put a whole pecan on the top)1/4 cup butter, melted
Mix the sugars & flour. Then beat in thoroughly the egg, milk, butter & vanilla. Fold in nuts.
Make pastry for two crust pie. Cut into 3 1/2 to 4 inch circles. I use cookie cutter or biscuit cutter. Press rounds into 24 tiny tart pans. You could probably use purchased pie crust. I use a fluted edged cookie cutter and cut out the rounds laying each one over a hole in the mini tart pan, then I go back and use the tips of my fingers to push from the edge into the center. The crust will sort of sink into the hole, then I even out the edge; then I use the bottom of a wooden spoon handle to gently tap the bottom and up the sides to press the crust in evenly. This makes it much more simple.
Put scant tablespoon of mixture in each tart. Bake till set.
