Dietary guidance: v
1 - Can Black Beans (can also substitute Black Eyed Peas), rinsed and drained
2 - Jalapeno Peppers, seeded and diced
1/2 - Sweet Red Pepper, seeded and diced
2 - Cloves of Garlic, minced
2 tbsp - Apple Cider Vinegar
2 tbsp - Extra Virgin Olive Oil
1/2 tsp - Ground Pepper (fresh if you've got it)
1/2 - Onion (or 3 green onions), diced
Mix all ingredients in a seal-able container and refrigerate overnight.
I usually allow to marinate for at least 24 hours and stir every 8 hours.
Great with tortilla chips, chips and crackers!
