Parsley/Garlic Pork Chops

Ingredients

2 - boneless pork chops
2-4 Sliced of Bacon
2 - cloves Garlic, sliced
1/4 c - Fresh Parsley, chopped
1/2 tsp - Ground Pepper (fresh if available)
1/2 tsp - Cajun Seasoning
1/4 tsp - Garlic Powder
1/4 tsp - Onion Powder

Method

Place each pork chop between plastic wrap and tenderize until about 1/4" thin with flat side of meat tenderizing mallet. Unwrap leaving on one sheet of plastic wrap.

Take dry ingredients (Pepper, Seasoning, Garlic and Onion Powders) and mix in a small dish until combined thoroughly. Rub generously onto one side of tenderized pork.

Sprinkle parsley across seasoned side of pork then place one clove of garlic on top of parsley and seasoned chops.

If chops are large enough and you would like to split into smaller portions do so now.

Wrap each chop, again, between two sheets of plastic wrap and slightly pound seasoning, parsley and garlic into chop and place in refrigerator for 30 mins (I recommend making ahead of time and letting marinate for min. of 4 hours)

Remove chops from wrap and form into rolls with seasonings on the inside. Wrap chops with bacon and hold together with toothpick(s).

Place in 375 degree oven for 40-45 minutes flipping roll half way through cooking.

cook over medium heat grill on foil for 20 mins (each side) and then remove foil and grill directly on rack for 20 mins addition each side rotating 1/4 turns at 10 mins on each side.....Delicious!!!
