1.5lb fish, eg tilapia.
1lb hot salsa
1/2 head garlic
small bunch cilantro
5T froz OJ concentrate
1pint sour cream
In a big pan dice half the onion, the garlic & habanero & sautee in 1T oil.
Add OJ, half the salsa and half the cilantro, bring to a simmer. Cook it down a little but not all the way to a paste.
Finely shave cabbage, & stir remaining salsa with sour cream. The rest of the onion & cilantro just get mixed as a third garnish.
When the marinade's ready, turn the heat way up, add the fish and a little salt. Cover loosely: we're poaching. Flip once. About 5 minutes total so watch closely.
