2 c shredded sharp cheddar cheese, softened
1 pkg (3 oz) cream cheese, softened
1/3 c dry white wine
1 Tbs finely chopped green onion
1 tsp prepared horseradish
1 pkg (2.5 oz) smoked beef, finely snipped
In a small mixer bowl, beat together softened cheeses until nearly smooth. Gradually beat in wine. Add onion and horseradish. Chill 1 hour or until slightly firm.
Shape mixture into two logs, each about 6" long. Roll each log in half of the beef. Wrap and chill until ready to serve. Serve with crackers.
