Creole Gumbo

1/2 c chopped onion
1 clove garlic, minced
3 Tbs butter
3 Tbs flour
1 can (16 oz) tomatoes
1 1/2 c water
1/2 c chopped green pepper
2 bay leaves
1 tsp dried oregano
1 tsp dried thyme
1/2 tsp salt
1/2 tsp hot pepper sauce
2 c chopped frozen okra
9 oz canned shrimp
7 oz canned crab meat
Hot cooked rice for serving


In a lg saucepan cook onion, garlic, and butter until onion is tender. Blend in flour. Cook, stirring constantly until flour is golden brown.

Stir in tomatoes, water, green pepper, bay leaves, oregano, thyme, salt, and pepper sauce. Bring to a boil. Reduce heat, cover and simmer for 20 minutes.

Remove bay leaves. Stir in okra, shrim, and crab. Cook an additional 5 minutes or until heated through.

Serve the mixture over hot cooked rice.
